They call them French fries for a reason, people. The pommes frites at Charleston diva Cindy Wolf's Francophilic Roland Park annex are what McDonald's fries are like in your hazy, nostalgic memory (but really never were): long and shoestring-cut, crisp-soft out of the fryer, perfectly salted, retaining just enough of their patina of oil to melt ecstatically into teeth and tongue. C'est magnifique. And don't even think about adding ketchup, you philistine.
