The proper pit-beef pit stop begins, as it must, with location--there on the right, on your way out of town, just after the big strip-club sign. Then the meat, carved to your specific preference on the scale from burnt to bloody. But never forget the ambiance. A trip to Chaps is a trip to an actual place: a more-or-less permanent, reasonably fly-proof structure by the roadside. It keeps the weather, the insects, and the traffic off you. There's room to unwrap your meal on the indoor picnic tables. Fast food doesn't have to be mediocre or harried.
