Ah, the tortilla. Central to every Latino culture and its cuisine and yet inexplicably abused by many local restaurants callously serving up tough little dough pancakes with every dish. Tortilleria Sinaloa is primarily a tortilla bakery, and this is reflected in the amazingly fresh, almost flaky disks of corn. Used as a foundation for the tiny but authentic menu, these tortillas lift Sinaloa’s food to the level of sublime. There are six kinds of tacos, ordered at the counter and eaten, shoulder to shoulder with Fells Point’s Latino population, at one of the six stools. Sinaloa fries their exemplary tortillas into chips as well, and these should be eaten with the kick-ass pico de gallo while practicing your Spanglish with the friendly and accommodating tortilleros.
