We’re not that big on the dog, usually. After all, despite its venerated national-foodstuff status, it’s really just finely mashed-up meat parts of indeterminate bovine (and/or porcine) origin, and kinda bland and mealy most times. Also, too many unfortunate souls still try to peddle dogs they boiled in some giant vat of fetid gray weenie water. Rather not, thanks. What we like about the kosher dog at Corned Beef Row institution Attman’s, other than its delectable, not to mention detectable, savory beef tang, is that it’s solid, you know? Tender, to be sure, but substantial. Dense, even. When you bite into it, you gotta bite down a bit. And we enjoy our dog so much more if it’s got a little of the heft and flavor of an actual cut of meat from some specific part of a barnyard creature. And plus, it comes served up with a free slice of bologna.
