Straight-up. Heaven bless the unflappable staff at Jimmy's in Fells Point, the flappable Miss Gina at Howard's Deli in Mount Vernon, and the have-your-back crew at One-Eyed Mike's in Fells Point, to name just a few of the city's class acts. But for a thrilling display of topflight, top-to-bottom professionalism, we present exhibit A, the seasoned staff at the Prime Rib. (Seasoned--yes, waiters tend to have long, fruitful careers here.) We were trying to think the other day if anything has ever gone wrong at the Prime Rib--an entrée delivered too soon, a water glass left unfilled too long, crumbs left on the table, a gross instance of upselling. If anything has ever gone wrong, it must have been smoothed over so completely that it's escaped our mind. Again, we know that great servers work at all culinary levels, performing a million little miracles every day, but this year we wanted to honor the pros.
