Grilled cheese is a purist's art--no fancy cheeses, no sprigs of scallion, no weird breads, no mushrooms, no bullshit. Every time we see some fancy-ass bistro putting their haute spin on this peasant's foodstuff, we cry a little on the inside. Yellow cheese, white bread, butter for greasing agent, flat hot surface to cook it on, put the damn thing in your mouth--it's not rocket science, people. That's why PaperMoon's no-nonsense, keep-it-real grilled cheese makes us so happy. We're a little iffy on the bacon and tomato--what is this, France?--but ham is a perfectly acceptable accompaniment. And as a bonus, they pre-grill the ham for, like, flavor or something. And they use more than two measly slices of cheese. And it's cheap. Grilled cheese with ham and fries--if we could get a decent glass of chocolate milk, we'd be in 7-year-old heaven.
