Best "unsung local heroes" would be more like it. In an era when food trends and restaurants come and go quicker than ever, the Chameleon Café remains a benign, yet inspiring, culinary mainstay of the Baltimore landscape. Tucked away on Harford Road, chefs/owners Jeff and Brenda Smith have been quietly and confidently turning out an inspired marriage of French technique and topnotch American ingredients--thereby creating some of the best food in the city--for the last six years. What's more, they strive to obtain as many of their ingredients from local sources as possible, create inspired seasonal menus (including their justly lauded late-summer Maryland menu), have some of the most knowledgeable, friendly waitstaff in the area, and provide fantastic wine deals every Wednesday. What more do you people want? Blood?
