A good bagel depends on being as many things as it isn't--chewy but not dense, the size of your palm not your head, baked golden not brown but toasted brown not beige, evenly coated with cream cheese but not too heavily. Adding bagels to the Crazy Man Restaurant Group's eateries on Cold Spring made sense as long as they sold them to Evergreen across the street, right? And they do, so no stepping on toes. Anyways, RPBC's bagels are perfectly delicious and they know their way around a toaster, carry rye and pumpernickel, and offer a counter overlooking the street just right for a nosh and a cuppa joe.
