Baltimore's best crab cake at a hotel restaurant? It'd be blasphemy if the proof weren't there on the plate. Crossroads' cake isn't the biggest we've seen, but then they do give you three of them, so you get your money's worth. And they are beauties, spiced and broiled just so and swimming in a lemon beurre blanc that brings out the richness of the pearly white meat. And every bite comes up lump--we've had a couple dozen Crossroads cakes and encountered no filler or mush. That's our kind of zero-tolerance policy. The staff at this Radisson restaurant tell us they cater to a largely local crowd, and it's a good thing--we fear a crab cake this wonderful would be lost on tourists.
