Breakfast is about responsibility, lunch is about sustenance, but dinner . . . dinner is about opportunity. Choice. Possibility. Dinner means exploring uncharted territory, finding new places that offer new things . . . or returning to the familiar comfort of old stalwarts and favorite dishes. Breakfast may have won the PR war with that "most important meal of the day" stuff, but dinner is what we invest our energy and emotion in. (Do you have romantic candlelight breakfasts? Enchanting four-course lunches? We didn't think so.) As night falls, the culinary world is your oyster, offering whatever your heart desires--be it a styrofoam box full of take-out in front of the TV, a raucous feed at the local tavern, or an elegant feast on fine china. Because dinner is all of these things and more, we've divided our section on it into several chapters, each representing a different atmosphere, a different aesthetic, a different goal, to match the evening meal's ever-changing moods.
